A Refreshing Weeknight Delight: Greek Chicken Bowls

This vibrant and customizable dish has everything you need for a refreshing and easy-to-prepare meal that everyone can enjoy. The best part? Each family member can build their own bowl with the ingredients they love—perfect for picky eaters!
This Greek Chicken Bowl is loaded with tender marinated chicken, fresh veggies, and topped with a tangy tzatziki sauce. If someone doesn’t like an ingredient, simply leave it out! The customization makes it ideal for family dinners where everyone has different tastes.
Greek Chicken Bowls Recipe
Ingredients:
Chicken Marinade:
1 pound chicken breast, cubed
2 tablespoons olive oil
Juice from 1 lemon
3 cloves garlic, minced
1 teaspoon dried oregano
Salt & pepper to taste
Tzatziki Sauce:
1 cup plain Greek yogurt
1 cucumber, grated
1 clove garlic, minced
Juice from 1/2 lemon
1 tablespoon olive oil
Salt & pepper to taste
For the Bowls:
2 cups cooked rice or quinoa
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, sliced and soaked in water for 5 minutes
1/2 cup Kalamata olives
1/2 cup crumbled feta cheese
Fresh parsley for garnish
Instructions:
Marinate the Chicken: Combine all marinade ingredients in a bowl. Add cubed chicken and mix to coat. Let marinate for at least 30 minutes.
Cook the Chicken: Heat a skillet over medium heat. Add the marinated chicken and cook until golden brown and fully cooked through, about 5-7 minutes.
Prepare the Tzatziki Sauce: In a small bowl, mix together all the tzatziki ingredients. Adjust seasoning as needed.
Assemble the Bowls: Add a scoop of rice or quinoa to each bowl. Top with cooked chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese. Drizzle with tzatziki sauce and garnish with fresh parsley.
