In our household, pancakes are more than just a breakfast staple—they're a tradition. Over the years, we've tried countless pancake recipes, tested premade mixes from the store, and even sampled restaurant pancakes, but nothing quite compares to the recipe we've come to love. It's our go-to for busy school mornings when we need something quick, delicious, and satisfying to fuel us for the day ahead.

What makes this pancake recipe so special? It's the perfect balance of fluffy and flavorful, with just the right amount of sweetness. We’ve even taken it a step further by preparing a bulk dry mix that we store in a container, making it even easier to whip up a batch of pancakes. All we have to do is add the wet ingredients, and in no time, we have a stack of mouthwatering pancakes ready to go.

One of the things we love most about this recipe is its versatility. Depending on our mood or the season, we mix things up by adding ingredients like pumpkin puree, chocolate chips, or blueberries and lemon zest. Each variation brings a unique twist to the classic pancake, ensuring we never get bored of this breakfast favorite.

We’re so excited to share this recipe with you, so you can enjoy these pancakes with your own family. Whether it’s a busy school morning or a leisurely weekend breakfast, this recipe is sure to become a favorite in your home, just as it has in ours.

Our Family’s Favorite Pancake Recipe

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  1. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, whisk together the milk, melted butter, egg, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; the batter should be slightly lumpy.
  4. Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side.
  6. Serve warm with your favorite toppings, such as maple syrup, fresh fruit, or a dusting of powdered sugar.

Optional Add-Ins:

  • Pumpkin puree and a pinch of cinnamon
  • Chocolate chips
  • Blueberries and lemon zest

We hope you enjoy these pancakes as much as we do. They’ve become a beloved part of our family’s morning routine, and we’re sure they’ll become a favorite in your home as well.
